Fractaled Chocolate Cookies

We all love chocolate chip cookies, we all love chocolate chunk cookies, but there is a particular pleasure that comes from taking the time to chop up bars of semi- or bitter-sweet chocolate by hand.

Ingredients
- 2 C of flour
- 1 tsp of salt
- 1 tsp of baking soda
- 1 C of butter
- ¾ C of dark brown sugar
- ¾ C of sugar
- 2 large eggs
- 2 tsp of vanilla extract
- 10 oz of chopped semisweet or bittersweet chocolate
- ⅔ C of lightly salted cocktail peanuts, roughly chopped (optional)
Directions
- Preheat the oven to 375°F / 190°C.
- In a large bowl, whisk the flour, salt, and baking soda together and set aside.
- Beat the butter, brown sugar, and granulated sugar together in a large bowl until creamy and well blended.
- Add the eggs one at a time, beating until each is incorporated.
- Blend in the vanilla.
- Gradually add the flour mixture, mixing each addition in until incorporated.
- Blend in the chocolate pieces (and optional peanuts).
- Place 1½-inch balls of the dough onto a cookie sheet about 2½ inches apart, and press down lightly.
- Bake in the preheated oven for 9-11 minutes until nicely browned, but still soft in the middle.
