Ingredients
  • 3 eggs
  • 100 g of sugar
  • 100 g of self-raising flour
Directions
  1. Preheat oven to 375°F/190°C.
  2. Grease an 8" or 9" round cake pan.
  3. In a medium bowl, whip together the eggs and sugar until fluffy, then lightly fold in the flour.
  4. Bake for 20 minutes, or until the top of the cake springs back when lightly pressed. Allow it to cool completely.
  5. Optional: sprinkle with icing sugar.
