Ingredients
  • 1 ½ C of chocolate covered almonds (or plain almonds) crushed
  • 3 C of powdered or icing sugar
  • ⅔ C of cocoa powder
  • ½ tsp of salt
  • 1 C of chocolate chips
  • 4 egg whites
  • 2 tsp of vanilla extract
Directions
  1. Preheat oven to 350°F / 177°C.
  2. In a medium bowl, combine the almonds (finely chopped), powdered sugar, cocoa, salt, and chocolate chips until combined.
  3. Whisk the egg whites until they are white and foamy, but are not stiff peaks.
  4. Fold the vanilla extract gently into the egg white foam.
  5. Add the dry ingredients to the bowl of beaten egg whites and gently stir until combined. (it will be thick, like brownie batter)
  6. Form cookie dough balls and place about two-inches apart on prepared baking sheet.
  7. Bake cookies for 12-13 minutes, until the cookies are puffed, shiny, and cracked.
  8. Allow cookies to cool completely before devouring!
