Ingredients
- 3 C of flour (cake flour ideally)
- 1 ¾ C of sugar
- 1 ½ tsp of baking powder
- ¾ tsp of salt
- 4 large eggs
- ¾ C of canola oil (or melted butter)
- 1 C of milk
- 1 Tbsp of vanilla extract
- ½ C of rainbow sprinkles
Directions
- Preheat oven to 350°F / 175°C.
- Line 2x (12-well) muffin pans with cupcake paper liners, then set aside.
- Whisk the flour, sugar, baking powder, and salt together in a large bowl.
- Add the eggs, oil/butter, milk, and vanilla. Mix until smooth.
- Fold in the sprinkles. DO NOT over-mix or the sprinkles will streak the batter.
- Fill each cupcake paper liner 3/4 full.
- Bake for about 15-18 minutes.
