Funfetti Cupcakes

Ingredients
  • 3 C of flour (cake flour ideally)
  • 1 ¾ C of sugar
  • 1 ½ tsp of baking powder
  • ¾ tsp of salt
  • 4 large eggs
  • ¾ C of canola oil (or melted butter)
  • 1 C of milk
  • 1 Tbsp of vanilla extract
  • ½ C of rainbow sprinkles
Directions
  1. Preheat oven to 350°F / 175°C.
  2. Line 2x (12-well) muffin pans with cupcake paper liners, then set aside.
  3. Whisk the flour, sugar, baking powder, and salt together in a large bowl.
  4. Add the eggs, oil/butter, milk, and vanilla. Mix until smooth.
  5. Fold in the sprinkles. DO NOT over-mix or the sprinkles will streak the batter.
  6. Fill each cupcake paper liner 3/4 full.
  7. Bake for about 15-18 minutes.
